Quick and Easy: One Pot Chicken Casserole

When it comes to cooking, some days are better than others. One day you may be happy to make or bake anything, even if it takes two hours to make. On other days you would much rather just call for a takeaway.

This is where the quick and easy recipes come in handy, the ones where you simply pop things into the oven. One-pot recipes as well as the casserole all-in-one dishes are always easy to make and are usually delicious. There is not much difference between the two, except that a casserole is normally cooked in the oven and the one-pot dish on the stove.

If you watch your quantities, you also may be able to stretch your one-pot dish over two nights. If it seems like it may not be enough, add a tin of beans or sweetcorn. During these challenging times, these types of dishes are especially helpful in offering you a healthy meal and saving money at the same time.

To make this dish go further, serve with side dishes, such as a salad or homemade bread.

This specific casserole dish is versatile, you can easily use beef, fish or even sausage or wors. You can also use any vegetables you like, with butternut and green beans a tasty choice.

INGREDIENTS

  • 2 cups of rice
  • 1 packet of mushroom soup
  • 4 cups of boiling water
  • 500 g chicken fillets, cut into cubes (you can also use chicken pieces, add on a little weight to compensate for the bones).
  • 1 onion, cut into chunks
  • assorted vegetables, chopped (for example, butternut, pumpkin, green beans, baby marrows, green pepper, peas)
  • 2 medium potatoes, par-boiled and cut into pieces
  • salt and pepper

METHOD

1.Heat the oven to 180°C. Place the rice in the bottom of the ovenproof dish. Add your meat, onions, potato and vegetables on top of the rice.
2.Season with salt and pepper. Do not add too much salt as the soup mix is already high in sodium. You can add other herbs and spices if you wish, such as paprika.
3.Mix the water with the packet of soup and pour over the rice and the rest of the ingredients. Cover the dish with foil and bake in the oven for one hour.
4.About halfway through, take the foil off for the last 30 minutes. Mix everything a little to ensure everything cooks more evenly. Remove from the oven and enjoy.
