Creamy Coconut Chickpea & Spinach Curry (Vegan)

Ingredients

For the curry:

  • 2 tablespoons coconut oil or olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • ½ teaspoon chili flakes (optional)
  • 2 cans (400 g each) chickpeas, drained and rinsed
  • 1 can (400 ml) full-fat coconut milk
  • 1 can (400 g) chopped tomatoes
  • Salt and black pepper, to taste

To finish:

  • 2 cups fresh spinach
  • Juice of ½ lemon
  • Fresh coriander (cilantro), chopped

Instructions

Start by heating the coconut oil in a large pan over medium heat. Add the chopped onion and sauté for about 5–6 minutes, stirring occasionally, until soft and translucent. This slow cooking builds the flavour base of the curry.

Add the minced garlic and grated ginger, stirring for another minute until fragrant. Lower the heat slightly to avoid burning, then add the curry powder, cumin, paprika, turmeric, and chilli flakes. Stir continuously for about 30 seconds to toast the spices and release their aroma.

Add the chickpeas to the pan and stir well so they are evenly coated in the spice mixture. Pour in the chopped tomatoes and coconut milk, stirring gently to combine everything into a smooth, creamy sauce.

Bring the curry to a gentle simmer, then reduce the heat to low. Let it cook uncovered for 15–20 minutes, stirring occasionally. During this time, the sauce will thicken slightly, and the flavours will deepen beautifully.

Once the curry has thickened, add the fresh spinach and stir until just wilted, about 1–2 minutes. Season with salt, black pepper, and lemon juice to brighten the dish and balance the richness of the coconut milk.

Remove from heat and garnish generously with fresh coriander.

Serve this curry hot over fluffy basmati or jasmine rice, or alongside warm naan or flatbread. For a lighter option, pair it with quinoa or cauliflower rice. Leftovers store well and taste even better the next day as the flavours continue to develop.
