Delightful Tortilla Egg Rolls in ‘5’

Looking for some inspiration for a quick breakfast or lunch? Try these unique tortilla egg rolls filled with peppadew and spinach.

The name doesn’t quite capture the magnificence of this quick and easy recipe. It only takes five minutes to prepare and looks gorgeous on your plate. A basic egg mixture flavoured with spices, is the base of this dish. It is very similar to an omelette, just topped with a tortilla and rolled up to create the lovely layers.

I have used spinach and peppadew in this version; however, you can use any toppings of your choice. Mushrooms and olives work really well, but be adventurous and experiment with different ingredients to make it your own!

INGREDIENTS
3 large eggs

1 teaspoon mixed herbs

1 teaspoon garlic salt, or garlic flakes

Salt and pepper to taste

1 cup spinach, chopped finely

4 peppadews, finely chopped

2 flour tortillas (or wraps)

2 tablespoons sundried tomato paste

METHOD
1.Beat the eggs well. Add the mixed herbs, garlic salt and salt and pepper.
2.Spread the tomato paste on the two tortillas. Set aside.
3.In a large frying pan, heat 2 tablespoons of oil. When the pan is hot, add half of the egg mixture. When the edge of the eggs are cooked, about 1 minute, add 1/2 the spinach and ½ of the peppadews.
4.After 30 seconds, place the tortilla on top of the egg and gently press down with your fingers.
5.Using a spatula, flip the tortilla omelette over and cook for a minute to brown the tortilla.
6.Slide onto a plate and roll up.
7.Repeat the process with the remaining ingredients to make the second tortilla.
