Rainbow Pasta Salad Recipe

Choose a leaner, healthier approach to a braai with lean cuts of meat and this colourful, veggie-filled whole-wheat pasta salad.

PREP TIME: 20 minutes
COOKING TIME: 10 minutes
SERVES: 10-12

Recipe Ingredients:

– 500g whole-wheat screw noodles
– 2 large tomatoes, diced
– 375ml Gouda cheese, grated
– ½ English cucumber, cubed
– 2 sticks of celery, sliced
– 200ml sunflower seeds
– 410g can sliced peaches, drained and chopped
– 250ml frozen corn (don’t cook)
– salt and freshly ground black pepper to taste

DRESSING:

– 250ml peach fruit yoghurt
– 50ml mango fruit chutney
– 10ml hot curry powder
– 100ml Chip & Salad sauce

Recipe Method:

* Well in advance of the braai, boil the noodles in plenty of salted boiling water until they are tender.

* Tip into a colander to drain, and set aside to cool.

* Prepare all the fruit and vegetables and toss them into the cooled pasta.

* Combine the dressing ingredients and use to bind the ingredients together and keep them moist.

* Chill until required.

Hints & Tips

* Pasta-based salads can be made in advance and enjoyed the following day when the flavours have developed and the taste is improved.
