I am accepting applications for a full time Sommelier for a private island sanctuary in Madagascar.

I am looking for a motivated Sommelier Manager to create a world class dining experience for international clientele. Previous island experience is advantageous but not essential. The post will only suit adventurous, highly motivated and driven individuals; simply put, we need qualified self-starters.

Job Description:

The successful Sommelier will report to the Food & Beverage Manager and will be responsible for leading a team of exceptional waitstaff and bartenders to deliver one of the best dining and drinks service experiences in the world. The Sommelier will work closely with the Executive Chef and Food & Beverage Manager to design food and wine pairing, assist with the procurement of all beverages and be responsible for all training and management of the wait team.

The dining experience must meet ‘beyond expectation’ standards, in line with the luxury brand

Role and responsibilities

Training and ensuring restaurant and bar SOPs are in place and adhered to
Assist the F&B Manager to manage a team of exceptional wait and bar staff to deliver world class service at all times
Stock control, budgeting, procuring and recording consumption
Leading the selection of available beverage options to an exceptional level
Development and maintenance of all department control procedures
Finding, exploring, researching and working with new suppliers to deliver an unmatched restaurant and beverage service.
Work with the waitstaff to create artisanal cocktails in line with the availability of ingredients.
Completing monthly budget and forecasts
Attendance in weekly HOD meetings and Reservation meetings when required to.
Establish a strong rapport with guests, research guest requirements prior to their arrival by working closely with guest relations to ensure we can deliver an entirely bespoke experience to match all guests needs
Engaging guests in conversations about personal wine preferences, items on the food menu etc, resulting in wine recommendations, as opposed to mere order taking.
Conduct wine tastings for guests and deductive tastings when necessary and take guests on guided tours of the cellar.
Ensure that the bar is set-up and ready for service daily, especially for evening service with all equipment and ingredients ready.
Ensure that all drinks are served in the correct glasses, at the correct temperature and where applicable with the correct garnish.
Place wine and beverage orders from South Africa in conjunction with the Food & Beverage Manager and as approved by the GM.
Design and issue the wine offering for villas.
Receive, view, reply and keep records of emails related to wine orders and suppliers
Keep the wine cellar in immaculate appearance, monitor the temperature regularly, keep it stocked, clean, orderly and universally understandable for other staff members.
Push sales when there is an opportunity and ensure correct billing information is sent to Front Office timeously.
Attend menu-briefings with chefs and other service staff before every serving period
Communicate any stock losses to the General Manager
Conduct Monthly stock takes and investigate discrepancies.

Prerequisites – must have:

Sommelier or Wine Steward Certification.
WSET Level 2 a must. Level 3, an added advantage.
Cape Wine Academy or Sommeliers Academy Qualification
Previous work experience in luxury properties or similar environment.
High end hospitality experience and sound knowledge of South African and French wines
Strong leadership skills and excellent problem solving skills.
Previous experience in a similar job or minimum of 4 years as a restaurant manager
Police clearance check on application
Working English

Experience of living in remote places (not essential)
