– 2 tsp sesame oil

– 800g chicken thigh fillets, halved

– 160g (½ cup) peach & mango jam

– 80ml (1/3 cup) barbecue sauce

– 80ml (1/3 cup) sweetened pineapple juice

– 2 garlic cloves, finely chopped

– 1 small brown onion, halved, thinly sliced

– 2 tbsp soy sauce

– 2 green shallots, sliced diagonally

– ½ tsp sesame seeds

– Steamed white rice, to serve

4 Method / Steps

Step 1

Heat the oil in a large deep frying pan over medium-high heat. Cook the chicken for 4-5 minutes each side or until browned.

Step 2

Meanwhile, combine the jam, barbecue sauce, pineapple juice, garlic, onion, soy and 1 tsp freshly cracked black pepper in a bowl.

Step 3

Pour jam mixture over chicken and bring to a simmer. Reduce heat to medium-low. Cook, covered, turning chicken halfway, for 15 minutes. Uncover and cook, basting chicken with jam mixture, for a further 5 minutes or until chicken is cooked through and sauce has thickened.

Step 4

Sprinkle chicken with shallot and sesame seeds. Serve with rice.
