Somizi’s Lamb Casserole and Polenta recipe – #DinnerAtSomizis

Step by step guide:

Remember Somizi does not do conventional cooking, he does not follow rules.

  • In a casserole dish, put the lamb cubes
  • Sprinkle olive oil on top of the lamb and massage into the meat
  • Add salt and pepper onto the meat
  • Add a handful of onions
  • Add garlic flakes
  • Put onto the stove to fry for a few minutes
  • Add curry paste while the lamb is cooking and also combined spices of your choice – what he calls government spice – a bit everything
  • Add a bit of water to the dish while stirring continuously and let it simmer for a few minutes
  • Remove from the heat
  • Cover the casserole dish and pop into the oven to simmer and ‘condubilate’ the flavours

For the Polenta

  • While water is boiling on the stove
  • Add the liquid stock into the pot of water
  • Add polenta powder slowly while whisking in the pot – add in bits until you have a soft and thick texture
  • Add butter into the polenta mix
  • Add some milk while stirring the polenta
  • Let it simmer on low heat until its well cooked

Serve the meal

  • Dish polenta first
  • Add generous servings of lamb casserole on the plate

Somizi Dinner

Cocktail recipe 

Pina Colada made specifically for Rami hence called the Pina Ramada.

Here you will need a fresh pineapple, Ice, vodka and coconut milk.

  • Slice pineapple and cut off the edges
  • Put ice in a shaker
  • Pour some vodka (enough vodka)
  • Mash (or puree) the pineapple slices until soft
  • Pour pureed pineapple into the shaker then shake it up
  • Pineapple and vodka mixed and pour into a glass
  • Add coconut milk
  • Add fruit slices – of your choice
