Our Client in the Killarney/Montague Gardens area is seeking the skills of (Mince & Sausage Supervisors), to start immediately.

Task & Responsibilities
JOB PURPOSE
To supervise and oversee the daily processing and production of minced products, sausages, and burger patties.
Routine Task
PRODUCTION PLANNING.
Supervise, motivate and control all the staff working in the Mincing, blending and forming sections.
Check that staff is at work and report absenteeism timeously to the section manager.
Ensure that staff is wearing clean undamaged protective clothing as per company policy.
Plan, document and measure the daily production output.
Capture the weights of all batch ingredients on job sheets when making up batches.
Ensure the completion of the record lot and batch numbers for production to ensure product traceability.
Ensure correct pre-planning of available base products to ensure adequate production of stock needed.
Ensure that your line staff batch controllers, filler operators, mince operators, bowl cutter operators, burger makers and packers adhere to your instructions and perform their duties as per their job descriptions.
Plan, coordinate and control issuing of raw materials.
Coordinate and control the making up of batches.
Ensure conformity in taste, texture, colour and visual appearance of all processed products.
Ensure finished product is checked for deviations from quality standards.
Ensure product is packed to customer specifications.
Ensure product is correctly weighed and labelled.
Ensure that all final products are labelled with the correct batch number.
Ensure good housekeeping practises in your dedicated work area.
Implement and maintain measures to reduce wastage of products during processing.
Ensure that temperature controls to products are adhered to and that the correct thawing procedures are followed.
Quality, Food Safety and Health Safety
Supervise, maintain and enforce food safety procedures and requirements.
Supervise, maintain and enforce quality policies, procedures and requirements.
Supervise, maintain and enforce Health & Safety legal requirements plus company procedures.
Ensure that all food safety and quality documents are completed timeously and handed to the HACCP section every end of the week.
Ensure that new templates for all food safety and quality documents are sourced from the HACCP section every start of the working week
Equipment
Ensure that all equipment is clean and in good working order.
Address maintenance non-conformances with Section manager.
General
Attend weekly management meeting with Section Supervisors.
Attend weekly management planning meeting with Operations Manager.
Identify and resolve any stock shortages and possible theft.
Candidate Requirements
Skills & Experience
Housekeeping
Ensure that areas under your control or allocated to you are clean, neat and tidy at all times.
Do the cleaning sign off daily, to agree that the cleaning was done properly.
Ensure that the areas under your control are left in a clean and neat condition at the end of every working day.
No stock is allowed to stand on the floor after hours; it must be sorted and packed in the freezer and fridges.
KEY PERFORMANCE
Ensure that production targets are met.
Ensure that quality standards are maintained.
All orders must be completed on time and correctly made up.
Production shortfalls to be brought to the Section Managers attention immediately.
Minimize wastage by controlling and measuring on a daily basis.
No orders to be packaged/labeled without correct paperwork in place.
Minimize waste of stock in your area of responsibility.
STOCK TAKING
Assist with month-end stock take in your area of control.
OTHER
Perform any other reasonable tasks as instructed and requested by the Section Manager and/or Operations Manager.
