Why you should never store potatoes in the fridge

What actually happens?
When you store potatoes in the refrigerator, the cold temperature can convert the starch present in the potatoes into sugar. This sugar further reacts and results in the stimulation of a dangerous chemical that can cause various types of cancers.

What Food Standards Agency says
According to a study conducted by the Food Standards Agency, it has been found that when baked or fried, the sugar content of potatoes gets mixed with amino acid asparagine present in the potatoes and results in the stimulation of a chemical called acrylamide.

What is acrylamide?
According to the American Cancer Society, Acrylamide is a chemical that is found in starchy food, when they are exposed to high temperature via frying, roasting, or baking. This chemical is also used in making paper, dyes, and plastic.

What research says?
Acrylamide was first traced in food in 2002 and since then studies have shown that those who eat starchy food cooked at high temperatures, might have higher chances of suffering from various cancers.
What’s the solution?

American Cancer Society recommends keeping potatoes in a dry place at room temperature. Also, it is recommended to avoid cooking potatoes at high temperature.

Other alternatives
Chefs recommend soaking peeled potato slices in water for 15-30 minutes before cooking. This act reduces the chances of formation of acrylamide during the cooking process.
