Mexican beef and bean pies recipe

The kids will love these tasty beef pies with colourful veggies inside.

7 Ingredients

* 1 tbsp olive oil

* 200g lean beef mince

* 1 cup frozen peas, corn and capsicum mix

* 425g can mexe-beans, drained

* 4 sheets of frozen puff pastry, partially thawed (see note)

* 1/3 cup reduced-fat sour cream

* 1 large avocado, mashed

3 Method / Steps

Step 1

Heat half the oil in a large frying pan over medium-high heat. Add mince. Cook, stirring with a wooden spoon to break up mince, for 3 to 4 minutes or until browned. Add frozen vegetables. Cook, stirring occasionally, for 4 minutes. Stir in beans. Season with salt and pepper. Transfer to a large plate. Cool for 10 minutes.

Step 2

Preheat oven to 220°C/200°C fan-forced. Line 2 large baking trays with baking paper. Cut 2 x 8cm circles and 2 x 10cm circles from each pastry sheet. Spread 1 teaspoon sour cream on small pastry circles. Top each with 18. beef mixture. Place large pastry circles over beef. Using a fork, press edges together to seal. Place on prepared baking trays. Brush with remaining oil.

Step 3

Bake for 15 to 20 minutes or until golden and puffed. Serve pies with avocado and remaining sour cream.
