Chicken is an excellent choice for consuming animal protein and rice is one of the most widely used foods in the world. So combining both and cooking them with vegetables means making a great source of nutrients.

  • Chicken rice

If you want to prepare a simple and delicious dinner, you need to know this recipe for rice with chicken. It fits perfectly for both lunch and dinner any day of the week.

Ingredients (for 2 people)

  • 200 gr of round rice.
  • 4 chicken thighs.
  • 1 medium onion.
  • ½ red pepper.
  • ½ green pepper.
  • 1 carrot.
  • 2 cloves of garlic.
  • 2 tomatoes.
  • ½ liter of chicken broth.
  • 1 bay leaf
  • Freshly ground black pepper.
  • Olive oil.
  • Salt.

Preparation

Peel and mince the onion and garlic cloves. Then, wash green and red peppers and chop them in the same way.  Peel the carrot and cut it into slices. In a large saucepan, heat 3 tablespoons of olive oil over medium heat. When the oil is hot enough, add the peppers, carrot, onion and garlic cloves finely minced. Sauté for 10 minutes until the vegetables are cooked.

Next, add the chicken thighs, salt and pepper to taste and fry for 5 minutes until it is colored on both sides. Meanwhile, peel the tomatoes, chop them finely and add them to the sauce. Add the bay leaf. Cook for 10 minutes until the tomatoes reduce and add the rice. Pour the chicken broth, mix well and cook for another 20 minutes. When the rice is ready, remove the saucepan from the heat and keep it covered for 5 minutes before serving.

  • Rice with chicken and vegetables

It is a simple recipe to impress family and friends. It is suitable for any occasion, as it is an appetizing and nutritious meal. One of its secrets is to fry chicken previously to avoid it being raw or too hard.

If you want to give an additional aroma and flavor to the dish, you can add saffron color to make it much more tempting. To do this, grind the strands in a mortar and dilute with a little broth from the stew, then add it to the preparation 15 minutes before finishing cooking.

Ingredients

  • 300 g of round grain rice.
  • 2 diced chicken breasts.
  • 2 carrots.
  • 1 zucchini.
  • 1 cup of frozen peas.
  • 1 large ripe tomato.
  • 1 green bell pepper.
  • 1 red bell pepper.
  • 1 liter of chicken broth.
  • Extra virgin olive oil.
  • Pepper.
  • Salt.

Preparation

Season the chicken breast dices and then brown them in 3 tablespoons of extra virgin olive oil over medium heat in a saucepan. Remove and reserve them. Chop all the vegetables, including the peppers and the tomato. Cook the vegetables in the same casserole and with the already chicken-flavored remaining oil.

Once cooked, add the chicken pieces again. Then add the rice and peas, stir a couple of times and pour in the broth. Cook for about 10 minutes over high heat. Lower the heat and cook for another 10 minutes. Remove from the heat and let it rest for a few minutes before serving.
